Abstract
Latar Belakang: Sanitasi rumah makan yang tidak memenuhi standar dapat menjadi sumber pencemaran makanan dan meningkatkan risiko penularan penyakit melalui vektor seperti lalat. Tujuan: Penelitian ini bertujuan untuk mengetahui kondisi sanitasi dan tingkat kepadatan lalat pada rumah makan di wilayah kerja Puskesmas Kota Palembang tahun 2025. Metode Penelitian: Penelitian ini merupakan penelitian deskriptif dengan pendekatan survei observasional. Sampel berjumlah 35 rumah makan yang dipilih dengan teknik purposive sampling dari tiga puskesmas dengan tingkat pelanggaran sanitasi tertinggi, yaitu Puskesmas Kertapati, Plaju, dan Gandus. Data dikumpulkan melalui observasi langsung menggunakan checklist sanitasi rumah makan serta pengukuran kepadatan lalat menggunakan fly grill. Hasil Penelitian: Hasil penelitian menunjukkan bahwa 71,4% rumah makan memiliki tingkat kepadatan lalat tinggi, sementara hanya 28,6% yang tergolong rendah. Pada aspek hygiene sanitasi, 85,7% rumah makan tidak memenuhi syarat sanitasi, dan hanya 14,3% yang memenuhi. Aspek sanitasi dengan pemenuhan tertinggi adalah penyajian makanan (91,4%), Diikuti oleh pengolahan makanan dan bahan makanan (masing- masing 71,4%). Sebaliknya, fasilitas sanitasi (45,7%) dan dapur, ruang makan, serta gudang bahan makanan (51,4%) merupakan aspek yang paling banyak tidak memenuhi syarat. Kesimpulan: Kesimpulan dari penelitian ini menunjukkan bahwa sebagian besar rumah makan memiliki sanitasi yang belum layak serta tingkat kepadatan lalat yang tinggi, sehingga perlu upaya perbaikan sanitasi secara menyeluruh untuk menjamin keamanan dan kesehatan pangan.
Background: Poor sanitation in food establishments can be a source of food contamination and increase the risk of disease transmission through vectors such as flies. Objective: This study aims to assess the sanitation conditions and fly density levels in food establishments within the working areas of Puskesmas in Palembang City in 2025. Methods: This research is a descriptive study using an observational survey approach. A total of 35 food establishments were selected using purposive sampling from three Puskesmas with the highest sanitation violation rates: Kertapati, Plaju, and Gandus. Data were collected through direct observation using a food establishment sanitation checklist and fly density measurement using a fly grill method. Results: The results showed that 71.4% of food establishments had high fly density levels, while only 28.6% were categorized as low. Regarding hygiene and sanitation aspects, 85.7% of food establishments did not meet the required sanitation standards, and only 14.3% complied. The aspect with the highest compliance was food serving (91.4%), followed by food processing and food ingredients (71.4% each). Conversely, sanitation facilities (45.7%) and the kitchen, dining area, and food storage (51.4%) were the aspects with the lowest compliance. Conclusion: Most food establishments in the study area have substandard sanitation conditions and high fly density levels. Comprehensive sanitation improvements are urgently needed to ensure food safety and public health.
