Abstract

Latar Belakang: Terdapat sejumlah kasus penyakit yang terkait dengan makanan dan minuman, seperti diare dan keracunan makanan. Pada tahun 2023, terjadi 11 kasus keracunan makanan yang disebabkan oleh air minum dalam kemasan setelah kegiatan pembersihan di salah satu sekolah dasar di Kota Palembang. Tahun 2023 menunjukkan keberadaan bakteri E-coli pada minuman es jeruk di taman kambang iwak kota Palembang Tujuan Penelitian :Penelitian ini bertujuan untuk mengetahui karakteristik, pengetahuan, personal hygiene pedagang dan kualitas mikrobiologi minuman dingin yag dijual. Metode Penelitian: Jenis penelitian ini adalah penelitian deskriptif dengan desain cross sectional yang mengidentifikasi karakteristik, pengetahuan, personal hygiene pendagang dan kualitas mikroiologi minuman dalam mengolah minuman dingin yang diperjual belikan di Taman Kambang Iwak Kota Palembang Tahun 2025. Hasil Penelitian: Analisis data menunjukkan bahwa pengetahuan dann personal hygiene pedagang sebagian besar sudah baik, dan pada uji laboratorium ditemukan e-coli pada sampel minuman yang diperksa yaitu sebanyak 9 dari 40 sampel. Kesimpulan: Masih adanya pedagang yang berusia dibawah 20 tahun, tidak semua pedagang memiliki pengetahuan dan personal hygiene yang baik serta ditemukannya e-coli pada beberapa sampel minuman.

Background: There have been several cases of food- and beverage-related illnesses, such as diarrhea and food poisoning. In 2023, there were 11 cases of food poisoning caused by bottled drinking water following a cleaning activity at an elementary school in Palembang City. Additionally, in 2023, the presence of E. coli bacteria was found in orange iced drinks sold at Kambang Iwak Park in Palembang City. Research Objective: This study aims to assess the characteristics, knowledge, and personal hygiene of beverage vendors, as well as the microbiological quality of cold beverages being sold. Research Method: This is a descriptive study using a cross-sectional design, identifying the characteristics, knowledge, and personal hygiene of vendors, along with the microbiological quality of cold beverages sold at Kambang Iwak Park, Palembang City, in 2025. Research Result: Data analysis showed that most vendors had good knowledge and personal hygiene. However, laboratory testing revealed the presence of E. coli in 9 out of 40 beverage samples tested. Conclusion: There are still vendors under the age of 20, not all of whom possess adequate knowledge and practice of personal hygiene, and the presence of E. coli has been detected in several beverage samples
