Abstract

Latar Belakang : Pempek merupakan makanan khas Palembang yang banyak dikonsumsi masyarakat. Namun, proses pengolahan dan penyajiannya memiliki risiko tinggi terhadap kontaminasi apabila hygiene dan sanitasi tidak diterapkan dengan baik. Kampung Pempek 26 Ilir sebagai sentra pempek di Kota Palembang memiliki potensi ekonomi besar, namun hasil observasi awal menunjukkan masih terdapat penjamah pempek yang belum memenuhi standar hygiene dan sanitasi. Tujuan Penelitian : Mengetahui gambaran perilaku hygiene sanitasi penjamah pempek di Kampung Pempek 26 Ilir Kota Palembang Tahun 2025. Metode Penelitian : Penelitian ini menggunakan desain deskriptif dengan pendekatan cross sectional. Sampel dalam penelitian ini berjumlah 96 orang penjamah pempek. Data dikumpulkan menggunakan kuesioner dan checklist observasi. Hasil Penelitian : Karakteristik responden menunjukkan bahwa berdasarkan jenis kelamin kategori laki-laki 22 (23%) dan kategori perempuan 74 (77%), tingkat pendidikan kategori pendidikan dasar (SD/SMP) 10 (10%) dan kategori pendidikan menengah (SMA) 86 (90%), lama kerja kategori < 5 tahun 73 (76%) dan > 5 tahun 23 (24%), pengetahuan pada kategori kurang baik sebanyak 53 (55%) dan baik 43 (45%) , sikap pada penjamah pempek memiliki 47 (47 %) sikap negatif dan sikap positif 49 (49%), tindakan pada kategori buruk 75 (78,1) dan kategori baik 21 (21,9 %). Kesimpulan : Berdasarkan hasil penelitian yang dilakukan sebagian besar penjamah pempek di Kampung Pempek 26 Ilir memiliki perilaku yang kurang baik seperti pengetahuan, sikap dan tindakan.

Background : Pempek is a traditional food from Palembang that is widely consumed by the community. However, the processing and serving of this food carry high risks of contamination if hygiene and sanitation are not properly implemented. Kampung Pempek 26 Ilir, as the center of pempek in Palembang City, has significant economic p otential, but initial observations show that there are still pempek handlers who do not meet hygiene and sanitation standards. Objective : To understand the hygiene and sanitation behavior of pempek handlers in Kampung Pempek 26 Ilir, Palembang City, in 2025. Research Method : This study uses a descriptive design with a cross-sectional approach. The sample for this study consisted of 96 pempek handlers. Data were collected using a questionnaire and observation checklist. Results : The characteristics of the respondents indicate that based on gender, the category of males is 22 (23%) and the category of females is 74 (77%). The level of education is categorized as elementary education (SD/SMP) 10 (10%) and secondary education (SMA) 86 (90%). The length of work is categorized as < 5 years 73 (76%) and > 5 years 23 (24%). Knowledge is categorized as poor with 53 (55%) and good with 43 (45%) the attitude towards pempek vendors has a negative attitude of 47(47%) and a positive attitude of 49 (49%). Actions are categorized as poor with 75 (78.1%) and good with 21 (21.9%). Conclusion : Based on the research conducted, the majority of pempek vendors in Kampung Pempek 26 Ilir exhibit poor behavior in terms of knowledge, attitude, and
actions.
