Abstract
Latar Belakang: Higiene sanitasi makanan merupakan upaya penting dalam mencegah terjadinya penyakit bawaan makanan. Di Indonesia, permasalahan higiene sanitasi pada rumah makan masih sering ditemui, baik dari aspek kebersihan peralatan, bahan pangan, maupun perilaku penjamah makanan. Penjamah makanan berperan besar dalam menjaga keamanan pangan, karena setiap tindakan mereka, mulai dari pengolahan hingga penyajian, sangat menentukan kualitas makanan. Faktor pengetahuan, sikap, dan tindakan penjamah merupakan indikator yang saling berkaitan dalam penerapan higiene sanitasi. Tujuan Peneltian: diketahuinya hubungan antara pengetahuan, sikap, dan tindakan penjamah dengan higiene sanitasi makanan pada rumah makan di wilayah kerja Puskesmas Kertapati Kota Palembang. Metode Penelitian: Jenis Penelitian ini menggunakan survey analitik dengan desain cross sectional. Pengumpulan data dilakukan menggunakan kuesioner pengetahuan, sikap, dan tindakan, dan menggunakan checklist higiene sanitasi. Hasil Penelitian: Hasil menunjukkan bahwa tidak terdapat hubungan antara pengetahuan penjamah dengan higiene sanitasi makanan (p >0,05), tidak terdapat hubungan antara tindakan penjamah dengan higiene sanitasi makanan (p >0,05). Namun terdapat hubungan antara sikap penjamah dengan higiene sanitasi makanan (p <0,03). Kesimpulan: Sikap penjamah dengan higiene sanitasi makanan pada rumah makan terdapat hubungan yang signifikan, sedangkan pengetahuan dan tindakan penjamah dengan higiene sanitasi makanan pada rumah makan tidak terdapat hubungan yang signifikan. Saran: Perlu dilakukan pembinaan dan pengawasan rutin oleh Puskesmas, pelatihan higiene sanitasi bagi penjamah, serta penyediaan fasilitas sanitasi yang layak di rumah makan guna meningkatkan kualitas keamanan pangan.
Background: Food hygiene and sanitation are essensial efforts to prevent foodborne diseases. In Indonesia, hygiene and sanitation problems in restaurants are still frequently found, particularly related to the cleanliness of equipment, food ingredients, and food handlers’ behavior. Food handlers play a crucial role in ensuring food safety since their actions, from preparation to serving, directly determine the quality of the food provided. Knowledge, attitudes, and practices (KAP) are three key behavioral aspects that influence the implementation of food hygiene and sanitation. Objective: To determine the relationship between knowledge, attitudes, and practices of food handlers and food hygiene and sanitation in restaurants within the working area of Kertapati Health Center, Palembang City. Methods: This research is an analytic survey with a cross-sectional design. Data collection was conducted using questionnaires to assess knowledge, attitudes, and practices, as well as a checklist to evaluate hygiene and sanitation. Results: The Chi-Square analysis showed no significant relationship between food handlers’ practices and food hygiene and sanitation (p>0,05). However, there was a significant relationship between food handlers’ attitudes and food hygiene and sanitation (p<0,05). Conclusion: There is a significant relationship between the attitudes of food handlers and food hygiene and sanitation in restaurants, while knowledge and practices did not show a significant relationship. Suggestion: Routine supervision by health centers, training on food hygiene for handlers, and provision of adequate sanitation facilities in restaurants
are recommended to improve food safety quality.
