Abstract
Latar Belakang : Industri Rumah Tangga Pangan (IRTP) pempek di Kelurahan 7 Ulu Kota Palembang memiliki peran penting dalam penyediaan pangan tradisional sekaligus mendukung perekonomian lokal. Namun, kondisi higiene dan sanitasi tempat pengolahan masih menjadi perhatian karena berpotensi menimbulkan penyakit bawaan makanan. Tujuan : Mengetahui gambaran kondisi higiene dan sanitasi tempat pengolahan pempek pada IRTP di Kelurahan 7 Ulu Kota Palembang Tahun 2025. Metode : Penelitian deskriptif dengan pendekatan cross-sectional. Sampel berjumlah 52 penjamah pangan dari 19 IRTP menggunakan teknik total sampling. Data primer diperoleh melalui observasi dan wawancara dengan checklist serta kuesioner, sedangkan data sekunder diperoleh dari Puskesmas 7 Ulu. Hasil : Mayoritas penjamah pangan berusia 25–42 tahun (73%), berjenis kelamin perempuan (94,2%), dan berpendidikan SMP–SD (67,3%). Lama bekerja sebagian besar ≤10 tahun (86,5%). Kondisi higiene peralatan seluruhnya belum memenuhi syarat (100%). Penjamah pangan sebagian besar berkategori cukup (55,8%),sedangkan prinsip higiene telah memenuhi syarat pada 84,2% IRTP. Dari sisi sanitasi, hanya 52,6% bangunan yang memenuhi syarat dan 42,1% fasilitas sanitasi yang layak. Kesimpulan : Kondisi higiene dan sanitasi di tempat pengolahan pempek IRTP Kelurahan 7 Ulu masih bervariasi, dengan beberapa indikator penting belum terpenuhi. Perlu adanya pengawasan, edukasi, dan pembinaan berkelanjutan untuk meningkatkan kualitas higiene dan sanitasi sesuai standar kesehatan. Saran : Pemilik dan penjamah pangan IRTP pempek disarankan lebih memperhatikan penerapan higiene dan sanitasi sesuai standar yang berlaku, sedangkan petugas kesehatan setempat perlu meningkatkan pembinaan dan pengawasan. Penelitian selanjutnya diharapkan menambahkan variabel lain agar hasil kajian lebih komprehensif.
Background : The Household Food Industry (IRTP) of pempek in 7 Ulu Subdistrict, Palembang City is important for Traditional food provision and local economic support. However, hygiene and sanitation issues remain a public health concern due to the risk of foodborne diseases. Objective: To describe the hygiene and sanitation conditions of pempek processing facilities in IRTPs at 7 Ulu ubdistrict, Palembang City in 2025. Methods: A descriptive study with a cross-sectional design was conducted among 52 food handlers from 19 IRTPs, selected through total sampling. Data were collected through observation and interviews using checklists and questionnaires, and secondary data were obtained from the 7 Ulu Public Health Center. Results: Most food handlers were aged 25–42 years (73%), female (94.2%), and had an elementary to junior high school education (67.3%). Work experience was predominantly ≤10 years (86.5%). All equipment hygiene failed to meet the standards (100%). Hygiene knowledge was mostly moderate (55.8%), while hygiene principles were applied in 84.2% of IRTPs. Regarding sanitation, 52.6% of buildings met the standards and only 42.1% had adequate facilities. Conclusion: Hygiene and sanitation conditions in pempek IRTPs at 7 Ulu Subdistrict vary, with several key indicators unmet. Strengthened supervision, continuous education, and capacity-building are needed to improve compliance with health standards. Recommendation: Owners and handlers of IRTP pempek are advised to pay more attention to the implementation of hygiene and sanitation in accordance with applicable standards, while local health officials need to improve guidance and supervision. Further research is expected to add other variables so that the results of the study are more comprehensive.
