Abstract
Latar Belakang : Formalin sering kali digunakan secara tidak benar sebagai zat
pengawet dalam makanan, termasuk tahu karena sifatnya yang mampu
menghambat pembusukan. Penggunaan formalin sangat berbahaya bagi kesehatan.
Deteksi formalin umumnya menggunakan metode kimia sintetik, sehingga
diperlukan alternatif uji kualitatif yang lebih alami dan mudah diaplikasikan, salah
satunya menggunakan ekstrak kulit buah naga merah (Hylocereus polyrhizus) yang
mengandung senyawa antosianin. Tujuan : Mengetahui efektivitas ekstrak kulit
buah naga merah dengan variasi konsentrasi terhadap hasil uji kualitatif formalin
pada tahu melalui pengamatan perubahan warna dan pembentukan endapan.
Metode : Penelitian ini merupakan eksperimen laboratorium menggunakan tahu
yang telah dipastikan negatif formalin, lalu direndam dalam larutan formalin 2%
selama 3, 5, dan 10 menit. Sampel kemudian diuji menggunakan ekstrak kulit buah
naga merah dengan konsentrasi 30%, 50%, dan 70%. Hasil diamati secara visual
berdasarkan perubahan warna dan endapan yang terbentuk. Hasil : Semakin tinggi
konsentrasi ekstrak dan semakin lama waktu perendaman, semakin pekat warna
larutan dan semakin banyak endapan terbentuk. Kombinasi perlakuan paling efektif
diperoleh pada konsentrasi ekstrak 70% dan waktu perendaman 10 menit, yang
menunjukkan perubahan warna pink tua keunguan dan endapan sangat tinggi.
Kesimpulan: Ekstrak kulit buah naga merah efektif digunakan sebagai indikator
alami untuk mendeteksi formalin secara kualitatif pada tahu. Kombinasi perlakuan
optimal adalah konsentrasi 70% dan perendaman formalin selama 10 menit.
Background: Formalin is often misused as a food preservative, including tofu, due
to its properties that are able to inhibit spoilage. The use of formalin is very harmful
to health. Formalin detection generally uses synthetic chemical methods, so an
alternative qualitative test that is more natural and easy to apply is needed, one of
which is using red dragon fruit peel extract (Hylocereus polyrhizus) which contains
anthocyanin compounds. Objective: To determine the effectiveness of red dragon
fruit peel extract with concentration variations on the results of formalin qualitative
tests on tofu through observation of color changes and sediment formation.
Method: This study is a laboratory experiment using tofu that has been confirmed
to be negative for formalin, then soaked in a 2% formalin solution for 3, 5, and 10
minutes. The sample was then tested using red dragon fruit peel extract with
concentrations of 30%, 50%, and 70%. The results are visually observed based on
the discoloration and deposits formed. Results: The higher the concentration of the
extract and the longer the soaking time, the more concentrated the color of the
solution is and the more deposits are formed. The most effective treatment
combination was obtained at a 70% extract concentration and a soaking time of 10
minutes, which showed a very high deep purplish pink discoloration and
precipitation. Conclusion: Red dragon fruit peel extract is effectively used as a
natural indicator for qualitative detection of formalin in tofu. The optimal treatment
combination is 70% concentration and 10 minutes of formalin immersion.
