Abstract
Latar belakang : Minuman es akuarium umumnya sama seperti minuman
manis lain, letak perbedaan hanya pada cara penyajiannya yaitu disajikan
menggunakan akuarium atau wadah besar ukuran ± 15 liter. Pedagang seringkali
tidak menutup wadah tempat minuman tersebut sehingga kontaminasi bakteri
sangat mungkin terjadi. Selain itu, kebersihan pedagang dan jenis es batu juga
dapat menjadi faktor tercemarnya minuman es akuarium. Tujuan Penelitian :
Diketahuinya Most Probable Number (MPN) Bakteri Coliform minuman es
akuarium yang dijual di Kota Palembang memenuhi syarat/tidak berdasarkan
PERMENKES No.2 Tahun 2023. Metode Penelitian : MPN Coliform dengan
jumlah sampel sebesar 12 sampel minuman es akuarium yang diambil dari 12
pedagang di Kecamatan Ilir Timur 1, Plaju, dan Sukarami dengan teknik
pengambilan Total Sampling. Hasil Penelitian : Distribusi Frekuensi MPN
Coliform dari 12 sampel sebanyak 2 sampel memenuhi syarat kelayakan
konsumsi, satu sampel menggunakan es batu kristal satu sampel menggunakan
es batu kemasan plastik (rumahan) dengan personal hygiene dan sanitasi tempat
penjualan cukup baik. 10 sampel tidak memenuhi syarat kelayakan konsumsi
menggunakan es batu kemasan plastik (rumahan) dengan personal hygiene dan
sanitasi tempat penjualan cukup baik dan kurang baik. Kesimpulan : Ditemukan
2 sampel memenuhi syarat menggunakan es batu kemasan plastik dan es batu
kristal dengan personal hygiene dan sanitasi tempat penjualan cukup baik.
Ditemukan 10 sampel tidak memenuhi syarat menggunakan es batu kemasan
plastik (rumahan) dengan personal hygiene dan sanitasi tempat penjualan cukup
baik dan kurang baik.
Background: Aquarium ice drinks are generally similar to other sweet beverages,
with the primary difference being in their presentation—served in an aquarium or
a large container of approximately 15 liters in capacity. Vendors often leave these
containers uncovered, increasing the risk of bacterial contamination. In addition,
vendor hygiene and the type of ice used are also potential factors contributing to
the contamination of aquarium ice drinks. Research Objective:
Knowing that the Most Probable Number (MPN) of Coliform bacteria in aquarium
ice drinks sold in Palembang City meets the standards based on the Regulation of
the Minister of Health of Indonesia (PERMENKES) No. 2 of 2023. Research
Method: The MPN method was used to assess Coliform levels in 12 samples of
aquarium ice drinks collected from 12 vendors in the districts of Ilir Timur 1, Plaju,
and Sukarami. The sampling technique applied was total sampling. Research
Results: The frequency distribution of Coliform MPN in the 12 samples showed
that 2 samples met the requirements for safe consumption. One sample used crystal
ice, and the other used homemade plastic-packaged ice, with both sold under
relatively good conditions of personal hygiene and sanitation. Meanwhile, 10
samples did not meet the safety requirements. These samples used homemade
plastic-packaged ice and were sold under conditions of moderate to poor personal
hygiene and sanitation. Conclusion: Two samples were found to meet the safety
standards, using either crystal ice or homemade plastic-packaged ice, with
adequate personal hygiene and sanitary conditions at the point of sale. Ten samples
did not meet the safety standards, using homemade plastic-packaged ice with
moderate to poor hygiene and sanitation practices at the selling location.
