Abstract

Latar belakang: Kanker merupakan salah satu penyakit tidak menular yang masih menjadi masalah kesehatan global dengan angka kejadian yang terus meningkat. Salah satu upaya pencegahan kanker dapat dilakukan melalui konsumsi pangan fungsional yang kaya senyawa antioksidan, khususnya flavonoid. Tepung kedelai, kacang merah, dan stroberi merupakan bahan pangan yang mengandung flavonoid dan berpotensi diolah menjadi produk pangan fungsional berupa pie sebagai makanan selingan tinggi flavonoid.
Tujuan: Penelitian ini bertujuan mengetahui daya terima, formulasi terbaik, kandungan gizi, dan kadar flavonoid pada pie dengan substitusi tepung kedelai serta isian kacang merah dan stroberi.
Metode: Penelitian ini menggunakan rancangan acak lengkap (RAL) nonfaktorial dengan tiga formulasi, yaitu F1 (15%), F2 (20%), F3 (25%) tepung kedelai. Uji organoleptik dilakukan terhadap 30 panelis tidak terlatih meliputi warna, aroma, tekstur, dan rasa. Formula terbaik dianalisis kandungan gizinya melalui uji proksimat dan kadar flavonoid total menggunakan metode HPLC.
Hasil: Formula F3 menjadi formulasi paling disukai dengan nilai rata-rata warna 4,10, aroma 4,13, tekstur 3,77, dan rasa 4,20. Uji Friedman menunjukkan terdapat perbedaan signifikan pada parameter warna (p=0,002), sedangkan aroma, tekstur dan rasa tidak berbeda signifikan (p>0,05). Analisis proksimat F3 per 100 gram menunjukkan energi 285,51 kkal, protein 9,51%, dan lemak 9,71%, karbohidrat 40,01%, kadar air 39,58%, kadar abu 1,18% dan kadar flavonoid total sebesar 53,6 mg/g.
Kesimpulan: Hasil penelitian menunjukkan pie dengan substitusi tepung kedelai 25% serta isian kacang merah dan stroberi memiliki daya terima paling tinggi dengan kandungan flavonoid yang tinggi sehingga berpotensi sebagai makanan selingan fungsional untuk pencegahan kanker.

Background: Cancer is a noncommunicable disease that remains a global health problem, with incidence rates continuing to rise. One approach to cancer prevention involves the consumption of functional foods rich in antioxidant compounds, particularly flavonoids. Soybean flour, red beans, and strawberries are food ingredients that contain flavonoids and have the potential to be processed into functional food products in the form of pies as high-flavonoid snacks.
Objective: This study aimed to determine the acceptability, optimal formulation, nutritional content, and flavonoid levels in pies made with soybean flour substitution and filled with red beans and strawberries.
Methods: This study used a non-factorial completely randomized design (CRD) with three formulations: F1 (15%), F2 (20%), and F3 (25%) soybean flour. Organoleptic testing was conducted on 30 untrained panelists, evaluating color, aroma, texture, and taste. The nutritional content of the best formulation was analyzed via proximate analysis, and total flavonoid content was determined using HPLC.
Results: Formula F3 was the most preferred formulation, with average scores of 4.10 for color, 4.13 for aroma, 3.77 for texture, and 4.20 for taste. The Friedman test revealed a significant difference in the color parameter (p=0.002), while aroma, texture, and taste did not differ significantly (p>0.05). The proximate analysis of F3 per 100 grams showed energy of 285.51 kcal, protein of 9.51%, fat of 9.71%, carbohydrates of 40.01%, moisture content of 39.58%, ash content of 1.18%, and a total flavonoid content of 53.6 mg/g.
Conclusion: The results of the study show that pies made with 25% soy flour substitution and filled with red beans and strawberries had the highest acceptability and a high flavonoid content, making them a potential functional snack for cancer prevention.
