Abstract
Latar belakang: Hiperkolesterolemia merupakan salah satu faktor risiko utama penyakit kardiovaskular yang dapat dikendalikan melalui peningkatan konsumsi serat. Kacang kedelai, kacang hijau, dan kurma berpotensi dikembangkan menjadi produk pangan fungsional dalam bentuk snack bar. Dalam pengembangan produk tersebut, perlu dilakukan pengujian daya terima, analisis kandungan gizi, dan pengujian umur simpan untuk mengevaluasi kualitas produk.
Tujuan: Menganalisis daya terima, kandungan gizi, dan umur simpan CholesNut Bar sebagai alternatif makanan selingan bagi penderita hiperkolesterolemia.
Metode: Penelitian ini merupakan penelitian eksperimental yang terdiri dari dua tahap, yaitu penentuan formulasi terbaik menggunakan RAL nonfaktorial dengan tiga formulasi CholesNut Bar (F1, F2, dan F3), serta pengujian umur simpan menggunakan RAL faktorial dengan dua faktor perlakuan, yaitu jenis kemasan (aluminium foil dan polypropylen) dan lama penyimpanan (0, 7, 14, dan 21 hari).
Hasil: Formula F2 memperoleh tingkat penerimaan tertinggi. Hasil uji Friedman menunjukkan terdapat perbedaan signifikan pada seluruh atribut organoleptik (p<0,05), sedangkan uji lanjut Wilcoxon menunjukkan adanya perbedaan nyata antarformula. Analisis gizi F2 menunjukkan kandungan energi 290,99 kkal, protein 15,37%, lemak 6,255%, karbohidrat 43,27%, serat pangan total 44,94 g, serat larut 6,95 g, dan serat tidak larut 37,98 g per 100 g. Selama penyimpanan terjadi peningkatan jumlah mikroba dan kadar air pada kedua kemasan. Kemasan aluminium foil lebih mampu mempertahankan mutu produk dibandingkan polypropylen, dengan umur simpan CholesNut Bar kurang dari 7 hari.
Kesimpulan: CholesNut Bar formula F2 berpotensi sebagai makanan selingan tinggi serat untuk membantu pengendalian hiperkolesterolemia. Kemasan aluminium foil lebih efektif dalam mempertahankan mutu produk dibandingkan polypropylen, dengan umur simpan kurang dari 7 hari.
Background: Hypercholesterolemia is one of the major risk factors for cardiovascular disease that can be controlled by increasing fiber intake. Soybeans, green beans, and dates have the potential to be developed into functional food products in the form of snack bars. In developing these products, it is necessary to conduct acceptability testing, nutritional analysis, and shelf-life testing to evaluate product quality.
Objective: To analyze the acceptability, nutritional content, and shelf life of CholesNut Bar as an alternative snack for individuals with hypercholesterolemia.
Methods: This study is an experimental study consisting of two stages: determining the optimal formulation using a non-factorial RAL with three CholesNut Bar formulations (F1, F2, and F3), and shelf-life testing using a factorial RAL with two treatment factors: packaging type (aluminum foil and polypropylene) and storage duration (0, 7, 14, and 21 days).
Results: Formula F2 received the highest acceptance rating. The Friedman test results indicated significant differences in all organoleptic attributes (p<0.05), while the Wilcoxon post-hoc test revealed significant differences among the formulas. Nutritional analysis of F2 showed an energy content of 290.99 kcal, protein 15.37%, fat 6.255%, carbohydrates 43.27%, total dietary fiber 44.94 g, soluble fiber 6.95 g, and insoluble fiber 37.98 g per 100 g. During storage, there was an increase in microbial count and moisture content in both packaging types. Aluminum foil packaging was more effective at maintaining product quality compared to polypropylene, with a shelf life of CholesNut Bar of less than 7 days.
Conclusion: The CholesNut Bar F2 formula has potential as a high-fiber snack to aid in the management of hypercholesterolemia. Aluminum foil packaging is more effective in maintaining product quality compared to polypropylene, with a shelf life of less than 7 days.
