Abstract
Latar Belakang : Pemanis buatan Siklamat sering digunakan oleh industri rumah (home industry) karena harganya murah dan tingkat kemanisan nya yang tinggi (30 kali lipat dari sukrosa). Namun, penggunaan yang melebihi batas maksimum yang ditetapkan BPOM (350 mg/kg) dapat menimbulkan risiko kesehatan seperti efek karsinogenik, gangguan saraf, dan hipertensi. Tujuan Penelitian : Untuk mengetahui gambaran kadar pemanis siklamat pada minuman es Home Indusrty di Simpang Kades KM 12 Kota Palembang Tahun 2026, berdasarkan jenis, harga dan rasa minuman. Metode : Penelitian Ini menggunakan deskriprif observasional dengan pendekatan cross sectional. Populasi sekaligus sampel adalah seluruh minuman (total sampling) es dari 28 pedagang terdapat 33 sampel di lokasi penelitian. Selanjutnya dilakukan analisis kadar siklamat dengan uji gravimeter untuk mendapatkan data kadar siklamat. Data jenis dan harga dikumpulkan melalui wawancara, sedangkan data rasa melalui uji organoleptik dengan kuesioner skala hedonik. Hasil Penelitian: Dari total 33 sampel, yang tidak memenuhi syarat 13 sampel , berdasarkan jenis minuman tidak memenuhi syarat es jeruk (6 sampel), es teh (2), thai tea (2), thai tea matcha (1), es royal chocolate (1), dan es kacang (1), berdasarkan harga yang tidak memenuhi syarat ≤Rp.5000/porsi (11) dan >Rp.5000/porsi (2), berdasarkan rasa yang tidak memenuhi syarat hanya kategori manis pahit 13 sampel. Kesimpulan : Masih ada sebagian kecil sampel minuman es yang mengandung kadar siklamat melebihi ambang batas. Saran : Penelitian selanjutnya untuk melakukan penelitian pada pemanis buatan lainya seperti aspartam, sakarin dan sorbitol.
Bacground : The artificial sweetener cyclamate is commonly used in home industries due to its low cost and high sweetness level (30 times that of sucrose). However, its use exceeding the maximum limit set by the Indonesian Food and Drug Authority (BPOM) of 350 mg/kg may pose health risks such as carcinogenic effects, neurological disorders, and hypertension. Objective : This study aimed to describe cyclamate levels in iced beverages from home industries at Simpang Kades KM 12, Palembang, in 2026, based on beverage type, price, and taste. Methods : A descriptive observational study with a cross-sectional approach was employed. The population and sample consisted of all iced beverages (total sampling) from 28 vendors, yielding 33 samples. Cyclamate levels were analyzed. Data on beverage type and price were collected through interviews, while taste data were obtained using organoleptic tests with a hedonic scale questionnaire. Results : Among the 33 home-industry iced beverages, those failing to meet the requirements included: based on type orange ice (6), iced tea (2), Thai tea (2), Thai tea matcha (1), royal chocolate ice (1), and peanut ice (1); based on price ≤ IDR 5,000/portion (11) and > IDR 5,000/portion (2); based on taste (sweet-bitter category) 13 samples. Conclusion : A small proportion of iced beverage samples still contained cyclamate levels exceeding the permissible limit. Suggestion : Future research should investigate other artificial sweeteners such as aspartame, saccharin, and sorbitol.
